Low Fat and Low Carb Recipe
Ingredients:
3 medium zucchini, cut into rounds
2 teaspoons olive oil
1/2 teaspoon pepper
Instructions:
Set the oven temperature to 400 degrees and allow the oven to heat up. Brush the zucchini rounds with the olive oil on both sides. Place the rounds in a single layer on a cookie sheet. Sprinkle evenly with the pepper. Roast the rounds 28 minutes or until they just begin to tender and have turned a light brown in color.
