Healthy Vegetable and Chicken Curry
Serves 4
Ingredients:
lb (or more) chicken breast, cubed
2 carrots, sliced
1 potato, peeled and cubed
1/4 cup mushrooms, sliced
1 bunch of broccoli, cut in florets
3 tbsp curry powder (or according to taste)
1 tbsp soy sauce
1 tbsp corn starch
2 cups skim milk
Pinch of salt
3 cloves of garlic, mined Olive oil
Instructions:
Heat a splash of olive oil in a large skillet or wok. Add the minced garlic and soy sauce and stir-fry briefly. Then add the chicken and vegetables and stir for a few minutes. Stir in the curry powder, corn starch, milk and season. Keep on stir-frying until the chicken is cooked through and no longer pink inside.
Enjoy immediately with rice noodles or basmati rice.
